Speaking of whole fat, I just made up a great recipe!  And I’m going to share it with you!  But first, if you’re interested in this kind of stuff, you know the whole Paleo diet, you should really check out  Primal Toad itself is a great blog, and this link leads you straight to a list he’s compiled of a ton of other great blogs for Paleo eaters.  As for my recipe, I don’t know what to call it, but my sister likened it to fondue, so we’ll go with that.

Start by cutting up some chicken breasts or thighs, whichever you prefer, into bite sized chunks.  Put them in a pan, plain, and start them cooking.  Meanwhile, chop up some onions, mushrooms (I prefer Crimini or Baby Bella, but it’s really your choice), and jalepenos.  All of these things come pre-cut if you know where to look.  Also, if you’re not into spicy, nix the jalepenos.  Make sure they’re minced into some decently small chunks.  Then mix all those things into a bowl with one large tub and one small tub of whipped cream cheese.  Throw in some sharp cheddar for extra flavor.  Unfortunately, I don’t have any measurements for you since I just eyeballed it, but you want to have about one part cheese, and one part of the rest of your ingredients.  When the chicken is cooked, dump that in the bowl, too, and mix very well.  Then spread your mixture into a square casserole dish, one that’s a couple inches deep.  Top with slices of mozzarella and a sprinkle of parmesan.  Pop that sucker into a 350-degree oven for about fifteen/twenty minutes, or until the cheese on top is bubbly and browned a little bit.  Serve it up using a big ol’ spoon.  Makes enough to feed four really hungry people or five not-so-hungry people.  Let me know if you have any questions!  Enjoy!
